      Last summer, right before my fellowship started, D and I decided to take a road trip that I’d been wanting to do since we moved to Arizona.

      Actually, a visit to White Sands National Monument was on my list of requirements when deciding to move to AZ (instead of L.A.), along with a trip to Page, to see Antelope Canyon and Horseshoe Bend, and to Arches National Park.

      We didn’t really have a plan, other than White Sands and we had 3 or 4 days before we had to be back, so we just loaded up our tent and headed out, which is, in my opinion, the only way to road trip.

      D had never been to Texas, so we made a slight detour to have lunch (Tex-Mex, obviously) in El Paso before heading up into New Mexico. I really wanted to make another detour to Truth or Consequences because I can’t think of a cooler town name, but I had already gotten sidetracked by some lunch margaritas, and we wanted to make it to White Sands before dark.

      Alamogordo is the nearest town to White Sands, and our plan was to stay in the area for two nights, camping on the dunes the first night, and then staying in town the second night.

      I’d seen pictures of White Sands before we went, but pictures can be misleading. As we started getting closer to the monument, I started to see sand on the side of the road, and I wasn’t sure if it was THE sand; it was white, but not as white as I thought it would be. But then we came around a bend in the road, and I saw the actual dunes, and there is no mistaking it, it is blindingly white. It looks like fresh snow.

      We got to the visitor center around 3:00 pm, and learned about the camping options, there were open spots but it was about a mile hike each way from the parking lot, which wouldn’t have been a problem normally, but by the time we got there it was so. freaking. cold out. And super windy. I’m pretty sure our tent would have blown away in the night with us inside of it. So we decided to camp in town that night, and come back and stay at the monument the next day instead.

      In case you aren’t familiar, parts of White Sands are used for missile testing, the first test of an atomic bomb was actually done there. They still do tests, including the night after we arrived, so we weren’t able to camp on the dunes that night either. You can call ahead to check the schedule, if you’re so inclined, or you can be like me and just show up and see.

      We stayed out on the dunes for sunset, the wind did end up dying down a little bit, but it was too late to camp by then. The dunes are so gorgeous, it’s really stunning to see, especially at sunset. You can also rent little saucers to go sledding down the dunes, but I’m not the most coordinated and decided the emergency room in Alamogordo was a site I could probably skip.

      We stayed overnight at the KOA in Alamogordo, and had a couple of drinks around the campfire with a guy we met from Seattle who was road tripping around the entire outside perimeter of the U.S. The next morning, we packed up, and basically flipped a coin to decide if we were going to keep going northeast to Santa Rosa (dyinggg to go here), northwest to Four Corners, or head back south.

      I would definitely recommend a visit to White Sands if you’re going to be near the area, it’s really stunning and has an interesting history. And luckily, I didn’t find out that the area around White Sands was the inspiration for the movie The Hills Have Eyes until I was safely back in Arizona, or I probably wouldn’t have slept at all.

      I mentioned here that we started a list of things we want to do now that we’re living in Southern California, so I thought I would share. I love to do anything outdoors, especially hiking or anything to do with the ocean, and there are also random activities and restaurants I’ve been wanting to try.

      I’m definitely still learning my way around here, so maybe some of these will get knocked off the list once I learn more about them, and I’m sure there are lots I’ll be adding as I learn about new things, so I’ll update this every once in awhile to see where we’ve been and what we thought, and any new additions.

      Good vibes only

      This has been a pretty busy few months, and I finally have some free time now so I thought I would do a post about what’s been going on lately.

      Last month I graduated with my Master’s degree, said goodbye to Arizona, and moved down to Orange County. Before I’d even unpacked, we were off to the Bay Area for Christmas, and then I flew to Mazatlan on Boxing Day to spend time with my family there.

      I got back a few days ago, and am finally all moved in, so I’m officially a resident of California again, but this time the Southern half. D has been here since September, he moved down here for work, so we’ve been living in different states for 4 months (really more like 6 since I was gone so much for News21) so it’s really nice to be back in the same zip code.

      It was actually kind of fun being on my own for a bit, I’ve never lived alone before. I had a cute little studio in Downtown Phoenix for a few months, I could walk and bike everywhere. I only had vegetables in my fridge (I’m vegetarian, he isn’t), we would FaceTime every night and I drove down to SoCal every couple of weeks to visit so it wasn’t terrible. We were both so busy at the time that we would just be doing homework in the same room anyway (he was finishing his Bachelor’s degree as well as starting training for his new job) so we have a long list of fun Southern California things we want to do now that everything is a little calmer and we’re living together again.

      I haven’t put up a post in so long, and I have a bunch of posts from the last 9 months that are basically done but I’ve never shared, so I’ve been thinking over the last few weeks about why that is, and whether or not I even want to continue to post here.

      What I’ve realised is that I initially started this blog (6 years ago!) when we moved to the Bay Area from Hawaii, and I didn’t know anyone and I didn’t know anything about where we were, so it was a fun hobby for me, I finally had somewhere to put all the millions of pictures I take, and it gave me a reason to explore places I maybe wouldn’t have otherwise.

      And now that I am back in the same position again, I’m glad I still have this space because I really do enjoy it.

      It’s only when I start thinking about whether or not I should be trying to get more followers (or actually promote my posts anywhere at all) or about the content (Is it interesting? Does it matter if it is since I don’t really care if anyone else sees it? Should it be more journalistic? Should I be writing about more serious issues?) that it isn’t fun and I start to avoid it.

      So I’m just going to try not to overthink it, and just let it be what it is, a fun hobby and a place for me to share whatever and whenever I feel like it.

      I’ve been a little MIA the last few months, mostly because I participated in a Fellowship called News21 this summer. I’ll be putting up individual posts of the different places I visited, hopefully soon!       Even though it was competitive to get in, and a lot of work, it was one of the best experiences I’ve ever had. I was able to travel to three new states, meet a lot of really interesting people, and improve my writing and video skills, all while working with an amazing and fun group of journalists and editors.

    • grad school: two down

      Oh hey, remember me? It’s just been a casual few months since I posted anything! I just finished my second semester of grad school, so I finally have time to write for fun, and to feed myself anything besides canned peas and Lara bars.

      This semester was even busier than the last one, since I was also writing for the ASU State Press, and working as a TA for one of the undergraduate classes, in addition to taking some pretty intense classes, and a foreign reporting trip to Mexico, but I made it through. You can check out some of the stuff I’ve been working on here, if you’re interested.

      I have one semester left, which I’ll be finishing in the fall, and over the summer I was accepted to do a fellowship, so I’ll be spending most of my summer in Phoenix (it was 104 degrees yesterday, and it’s only May. Help.) but also traveling to a few places around the country reporting on stories.

      I have a few weeks off before it starts, so I’m jamming in as many things as I can, including a Vegas trip, a few days in the Great White North, and a road trip to New Mexico to visit White Sands, which has been on my list of things to do since we moved here two years ago.

      I’m excited to do some reading for pleasure (!) and post as much as I can here, since I still have some trips from last fall that I haven’t hit publish on yet.

      I kind of can’t believe it, but I just finished my first semester of grad school.

      That’s actually not true, I still have one more paper to write, but all of my big projects were due on Friday so everything after that feels kind of anti-climactic.

      Here are my two big final projects if you want to check them out, one on the differing experiences of refugees and undocumented immigrants in Arizona and one on the history of racial disparity in Arizona.

      I have a few weeks off over the holidays and I’ll be going back to the Bay for most of it. I’m thinking SF for New Year’s Eve, I want to make a trip up to Bend to see my girl, and I’m hoping to sneak off to Big Sur for a few days. I’ve been dying to go camping there ever since we moved to California 5 years ago, but it just never happened.

      It might be totally freezing in December, even with the sub-zero sleeping bags we bought on the way back from Montana this summer. Our only chance will be to huddle together for warmth. I, for one, choose death (Without A Paddle? Anyone? No?).

      I’ll be working over the break too and I already have reading assignments for next semester so I know the time it’s going to fly by.

    • vegetarian: an update

      caprese salad

      I will have been vegetarian for two years as of this summer, and I get asked all the time how it’s going, so I decided to do an update on what I usually eat, some of my favourite recipes, and things I want to try.

      Breakfast:

      I make my own granola (loosely based on this recipe) and it’s my favourite thing. I literally wake up in the morning and work out almost every day because if I do I am rewarded with the best breakfast ever, which is fresh berries (I usually do raspberries and blackberries, but strawberries are good too, and blueberries are also a choice someone else might make) with granola and unsweetened vanilla almond milk. SO GOOD.

      If Derek is cooking, he usually makes me an egg, mushroom and onion omelet, cooked dry to the point of being almost burnt. YES.

      Snacks:

      I always have raw almonds and cuties in rotation for snacks, and I keep cans of sweet peas in my cupboard. 60 seconds in the microwave and they are good to go.

      I also love hummus with cucumbers or mini sweet peppers.

      Lunch:

      I eat a lot of salads for lunch, and I usually add nuts or beans to add protein. I’m a pretty terrible vegetarian actually, I hate Tofu or “fake” meat products and I won’t eat eggplant or sweet potato. Want to have me over for supper? I’m really not picky, it’s just that those things are gross.

      Caprese salads are pretty much my jam, and I also eat a ton of soup. I still make this all the time, I almost always have a tupperware of it in my fridge, (sans hamburger) because it’s so delicious and so filling. Derek will eat it all if I’m not paying attention.

      Every once in awhile I’ll have a veggie burger, there are quinoa and garlic ones that I like on the BBQ. I’ve tried making my own black bean burgers and it was a fantastic failure every time.

      Supper:

      Luckily we live someplace where so we can BBQ all year round, otherwise I might actually starve to death. More often than not I chop up veggies (cauliflower, mushrooms, onions, peppers, brussels sprouts) in a piece of tinfoil with olive oil and salt and pepper and roast them on the grill. It’s one of my most favourite things and I never get sick of it.

      Cauliflower Alfredo– I’ve made this a couple of times and it’s seriously so good. I like to add sun-dried tomatoes to the blender as well to give it a little extra flavour, or pesto would work great as well.

      Lentil tacos- Instead of tacos with hamburger, just cook lentils with taco seasoning. I usually make them with lettuce cup taco shells, cheddar cheese, tomatoes, salsa and greek yogurt. Derek likes them too.

      Caprese Portobellos– Sooo good on the BBQ. I soak tomato slices in balsamic, olive oil and salt and pepper, clean and de-gill a portobello mushroom cap, then put the mushrooms and fresh mozzarella into the mushroom caps with a squiggle (it’s a technical cooking term) of balsamic glaze, then BBQ them for about 25 minutes. You have to wait until the mushrooms dry out and deflate a bit, but so worth it.

      Pasta Primavera with Feta- No recipe for this, I just roast veggies (tomatoes, carrots, onion, mushrooms, peppers) in the oven with olive oil, and cook quinoa pasta. When it’s done I toss it all together with extra olive oil, salt and pepper and feta. I had this dish for the first time at Kafe in Ubud, Bali, and I went back and ate there almost every day the whole week because of how amazing it was. I do not grow tired of you (with heart eyes).

      Roasted Veggies with Feta- The same concept as above, but with no noodles. Only slightly less good.

      Things I will try if I’m ever home for more than 5 minutes:

      Butternut Squash Linguine– I actually tried to make this once, but I couldn’t find any butternut squash? But this will happen sooner or later.

      Also, I bought myself this cookbook in a frenzy of New Year’s self betterment, and I have yet to make anything out of it. I’ve been traveling a LOT but I will get my life organized and get cooking this month. Just in time for it to be too hot to turn on the oven.

      Perfect.

      I always try to have as many veggies on hand in the house as possible, because it’s SO easy to eat terribly as a vegetarian. Actually the first time I tried it I lived for a week on chocolate, chips and cheese and wondered why I didn’t feel well and concluded that I must need meat to survive.

      The only things I miss about eating meat:

      Crab cakes: Because yum. If I ever gave up vegetarianism I would probably only eat fish which I never actually ate before, but I would become pescatarian to just eat veggies and crap cakes for every meal.

      Xiao Long Bao (soup dumplings): If you haven’t had these, stop what you are doing and go find them. Actually the only time I’ve been sad that something is off the menu. I went to Yank Sing in SF for Dim Sum for the first time in a long time, and I remembered that these existed and almost cried. I tried to find out if there is a vegetarian version, but they need actual bones to make them, so that’s probably a no.

      We bought a house! I’m not sure why we thought buying a house the week before Christmas when we aren’t even going to be home was a great plan, but here we are.

      We got the keys last weekend (I was still in San Francisco) and started demoing right away.

      Our goal is to have all of the flooring ripped out, the carpet replaced and the entire upstairs painted by Thursday because we have to move out of our rental and have it cleaned by Friday so we can leave for San Francisco on Friday night.

      So my days recently look like this:

      1. Wake Up
      2. Work out. Only 10 days til the beach!
      3. Pack things, then realize I packed all the bowls and can’t eat breakfast
      4. Work all day
      5. Make something for supper, then head over to the new place
      6. Paint/do things for 3 hours
      7. Go home, shower, watch Homeland, go to bed

      Which is really funny because previously after working all day I thought going to the library, which is like 3 blocks from my house, was too arduous a task to even consider.

      I guess that’s why they say if you need something done, ask a busy person?

      I’m really excited about the new place, the best part by far is the front porch, pictured above.

      I plan on spending 98% of my time out there reading and drinking tea, and hoping I don’t get hit in the head by a golf ball.

      Summer is not even officially over (and honestly I live in Arizona, so it is ever really NOT summer?) but I already can’t wait for next year.
