    • pinata.

Posted at 4:05 pm by jasminedesirees, on June 10, 2013
I’ve been seeing recipes for Pinata cakes for a few months now, so I decided to make one for my brother-in-law’s birthday.
It was a bit tricksier than I thought, I had to make 4 cakes just to get two that I could use, because brownie mix and cake mix look remarkably similar, and also because baking a cake in a bowl apparently takes a lot longer than it does in a pan, and if you don’t bake it long enough, and then you flip it upside down, you get something that looks a little like this:
Luckily it still tasted fine, so I ate it.. you know, for research purposes
      Finally, two good cakes
The stuffing. I wanted to put in little bottle of booze, but I couldn’t fine any. They don’t sell them at Safeway, weird right?
Cut off the tops of the two cakes so they are flat, and then hollow out the bottom cake
Fill it up with candy, or whatever, and put icing on it to seal the two halves together
      Sharks colours are optional
Cake anddd candy. What more could you ask for?

Here are some tips if you’re thinking of doing this:

      1. Make sure you bake the cakes for at least an hour each, and then check them to make sure they are really well done, you can’t really go by the baking time on the cake mixes

      2. I didn’t hollow out the top of the cake, because I wanted it to still be a cake, and not be all candy, but if you want more of a pinata effect where the candy falls out, you can hollow out the top

      3. Do a crumb coating on the cakes first, before you ice them

      4. And this is important, make sure to spray the baking bowls with non-stick spray to make your life a lot easier when you try to take the cakes out of the bowl

      That’s it. Happy sugar coma!

    • brownie slut

Posted at 8:49 pm by jasminedesirees, on May 27, 2013

I’m pretty sure everyone has heard about slutty brownies by now. Cookie dough on the bottom, a layer of Oreos, covered by moist chocolatey brownie mix and baked in the oven. For some reason I’d never tried to make them before, and I finally decided to see what all the fuss was about.

I decided not to do the Oreos, as it seemed like it would be a bit overkill, and also would have left me with half a package of Oreos laying around which I would have inevitably devoured, and since it was practically a guarantee that I would be eating most of the cookie dough before it ever made it’s way into the bars, it seemed like a good move.

So my brownies were more promiscuous than slutty. But they were still delicious. They literally took 5 minutes to throw together (20 if you add in the time to eat cookie dough until you are feeling ill, before you proceed with the baking) and then 45 minutes of bake time.

If you are feeling super ambitious you could make your own cookie dough and brownie mix and then combine them, but I used store bought. It is definitely a lazy man’s dessert, but it’s a bit more special than just making cookies, or just brownies to a potluck, and they are really delicious.

Derek was calling me brownie slut the whole night after I made them, but you can’t have everything in life.

It came like that, I swear
I don’t know why I always want to bake when I’m wearing white
I burnt my mouth trying it right when it came out of the oven, but worth it
      Yum

It finally feels like spring outside, and one of the best parts is that there are lots of fresh fruits and veggies at the farmer’s market, instead of just that one guy with some old potatoes like there is in December.

I only had one mission last weekend, and that was to make pico de gallo. I planted cilantro, which I hate, and which I’m pretty sure hates me, only for this exact purpose. I tried to get everything I needed at the farmer’s market, and I was mostly successful except for the jalapenos, which I had to go to the store for, twice, since I forgot them the first time.

This was pretty easy to make, just a bit of chopping. The hard part was pacing anxiously around the house waiting for it to get cold in the fridge so I could eat it.

trust me, the feeling is mutual

It was a great snack on a 90 degree day, and the obligatory margarita accompaniment was very refreshing.

      Recipe here.

    • cauliflower cream

Posted at 3:59 pm by jasminedesirees, on April 29, 2013

I’ve been seeing recipes for “cauliflower substitutes” for a few months now, but I’ve always been very skeptical. The other day I saw this recipe for cauliflower Alfredo sauce, and I had no choice but to try it.

A frighteningly large percentage of my life is spent wishing I was eating Alfredo when I’m not, so I figured if there was even a slight chance this would work, it was worth a try.

Let me tell you, it was delicious. It was a bit lighter than alfredo sauce obviously (which is probably the point) and a lot less thick, but it was super creamy and delicious. It was a bit time consuming, and there is a real risk of 3rd degree burn as you transfer the cauliflower and broth into the blender, but once you’re past that part it’s a breeze.

I only used about half a head of cauliflower and it made tons. We had enough for a huge batch of alfredo for supper that night, and enough to save in the fridge for supper later in the week. I made it with quinoa pasta, but any pasta will work.

One tip, do not skimp on the black pepper, it’s very important.

please sir, I’d like some more

Here are some things that are making me happy right now:

Leonard Cohen Chelsea Hotel#2 cover by Lana Del Ray. Her voice, and his lyrics.

“I remember you well in the Chelsea Hotel, you were famous, your heart was a legend you told me again you preferred handsome men, but for me you would make an exception”

“I don’t mean to suggest that I loved you the best, I can’t keep track of each fallen robin. I remember you well in the Chelsea Hotel, that’s all, I don’t even think of you that often”.

      Love.

Daffodils make the whole house smell delicious and brighten up the table.

my weekend uniform. I see ripped jeans in stores all the time for tons of money, these are perfectly ripped and broken in, and also free, aka stolen from my sister

This recipe for salmon. I was so excited about the delicious salmon I had in Aptos that I wanted to try to make some at home.  It was ridiculously easy, and seriously delicious.

I used olive oil instead of vegetable, and fresh squeezed lemon juice and black pepper instead of lemon pepper, and marinated it over night. We ate it with garlic mashed potatoes and broccoli, and it was an amazing supper.

    • banana cream.

Posted at 6:06 pm by jasminedesirees, on April 24, 2013

My parents came to visit a few weeks ago, and it was my dad’s birthday. I wanted to make him a birthday “cake” but I wanted to make him something he would really like, and he loves banana cream pie.

I found this recipe on Pinterest, and made it for him. I really don’t like bananas, they are one of my most hated foods, my mom told me even as a baby I wouldn’t eat them, so I wasn’t really expecting to enjoy this pie, but it was amazing.

The crust has a hint of cinnamon which is absolutely essential, and really adds a lot to the overall flavour. The creamy filling was cool and delicious, and it wasn’t super banana-ish. Even after a huge dinner at Texas Roadhouse, this pie was so good that I had to have a second piece.

    • temptation.

Posted at 4:25 pm by jasminedesirees, on April 15, 2013

My first year living in Hawaii, I was introduced to the South Shore Grill by my boyfriend at the time. The relationship didn’t last, but SSG and I have been an item ever since. One of the best things they have there (although everything is delicious) are their desserts, especially their peanut butter temptations.

Now that I’m not living on the island, I don’t get these delicious treats every week, and it’s quite sad. When I went back to Hawaii in January we took my mom to SSG so that she too might know the joys that are peanut butter temptations. I’d never even thought about trying to make them myself, since I couldn’t fathom the wizardry that would be necessary to get the Reece’s into the cookies without baking them into a melty disaster.

My mother took one look at the cookies and declared “They probably just push the peanut butter cups in right when they come out of the oven.” I’m pretty sure that’s why we have parents, for exactly such moments as those.

I was able to find a recipe, and made them last week and they were amazingly delicious, and so simple to make (literally 15 minutes from when I started to when I took the first bite) that I was kind of embarrassed I’d never thought to make them before.

basic peanut butter cookies in a mini muffin tin, bake about 8 minutes
push in peanut butter cups once they come out of the oven

One final tip is to make these on a night when you are home alone, so you don’t have to share with your husband.

Not that that’s what I did. I would never do something like that, especially knowing how much Derek adores these cookies. Obviously.

    • nanaimo

Posted at 2:30 am by jasminedesirees, on April 6, 2013

I finally got around to making the nanaimo bar cupcakes I was salivating over here. They were really good, chocolatey and nutty with that delicious nanaimo bar filling as icing.

Next time I make them I think I will leave out some of the almonds though, I only put about half of them in, and it was still a bit too nutty for me, but if you love nuts then by all means, add them all in.

The icing is sooo good, the situation rapidly devolved into chaos, and we ended up eating most of the bowl with our fingers

I bake a lot, especially lately. But I have to be honest, these are the best thing I’ve made in a long, long time. Delicious chocolatey truffles with an Oreo cookie crust and fresh raspberries, these got rave reviews from everyone that tried one. I will definitely be making these again.

they didn’t have Oreo crumbs so I had to get creative and crush up Oreo pie crusts

I can neither confirm nor deny rumours of second degree burns from melted chocolate

      Oreo cookie crusts with raspberries…

      Then add melted chocolate…
And demolish. Seriously, these were amazing.

    • freshly baked

Posted at 4:48 pm by jasminedesirees, on March 13, 2013

I get very attached to the characters in books. Like to an alarming degree. Sometimes I feel that I know them better than I know people in real life, and they can be very influential on me and my choices.

I’ve never made bread before in my life, but I’m reading The Storyteller by Jodi Picoult, in which the main character, Sage, is a baker, and it’s really getting to me. I spend an inordinate amount of time online researching bread recipes, and happily daydreaming about making Challah bread, which I’m fairly certain I’ve never even seen in real life. That’s how you know when writing is good, when it is so descriptive and consuming that you actually start to believe you possess the qualities of the character you are inhabiting.

I truly, at this moment, believe that the only thing coming between me and my unassailable destiny of being the greatest bread maker that ever lived, is that fact that I’ve never tried to make bread.

So, I decided to try it.

I decided to use this recipe, it is called Best Bread Ever, and I mean, I’m obviously not going to settle for anything less than that.

      ingredients

my kitchen smelled amazing as soon as I started mixing the ingredients

I loved how soft it was after it finished rising

      my 10 pm supper

This bread was soooo good, I will definitely be making it again. Unfortunately, (or fortunately, if you’re me) the rising and baking took longer than I thought, so by the time supper was ready, Derek was already in bed and I had no choice but to eat my freshly baked bread and delicious cheese by myself.
